High End French Pastry, Delivered

I am a French pastry chef living in the Bay Area, ready to create for you the sense of wonder and excitement that brought me to the profession. I trained under Stéphane Tréand, 2008 World Pastry Champion, and I have worked in high-end pastry shops and luxury hotels. Now I am bringing my expertise directly to you!

Growing up in the US with a French mother taught me a love for food, and pastry in particular. Going to visit my French family every summer growing up cemented my love for French pastry, pâtisserie. I loved looking at the intricate cakes and other sweets in the shops. I was always sad that I couldn’t find the same delicious treats in the US, so I decided that I would have to be the one to make them!

I started planning to go to culinary school at the age of 10. But I have also always been a huge science nerd – hence my logo with the molecule for sucrose. After studying marine biology and neuroscience, I went to McGill University in Montreal to study philosophy and anthropology. However, I quickly came back to my first love and passion, and came back to California. And here we are!

Why Chocolate By E?

I believe in the sweet tooth. My whole life I have been called gourmande by my mother, a word that is hard to translate that connotes an irrepressible love for delicious food, and in my case refers to my absolute love for sweets.

I went into pastry because I love making people happy. The moment someone walks into a pastry shop or sees their dessert arrive on the table, there is such a look of childlike wonder and delight. I want to help everyone feel that way, as often as possible. I have also always loved the intersection of food and science. I find the chemistry behind baking and cooking reactions fascinating, and it also helps me celebrate my love for science.

I think the most special moments are to be celebrated with something sweet and delicious. And by “most special moments” I mean not only celebrations like birthdays and holidays, but also just thanking your friend for being there, or because it is Wednesday. Let me create something wonderful for you, and let you experience that sense of wonder.
