Welcome 2022, we are so ready for you! Let’s be honest, any year we move away from 2020 will be a good thing in my book. I hope we all get to celebrate with loved ones and have lots of new opportunities this year. One promise I will make right now is you will have lots of opportunities to eat delicious chocolates and sweets!
The flavors this month are wintery and celebratory. I am celebrating many birthdays this month (including my own), so I made sure the flavors this month would feel like a present I would want to devour. Let’s start this year out on a sweet note!

Grapefruit and Mahlab Caramel
Mahlab is a Middle Eastern spice made from the ground pits of a particular type of cherry. It is fruity and lightly nutty, almost like marzipan but lighter. Paired with grapefruit, the caramel is so delicious. The grapefruit is so tangy and light, and the mahlab rounds it out and deepens the whole flavor profile.

Hot Buttered Rum White Chocolate Ganache
I think hot buttered rum might be one of my all-time favorite hot cocktails. I have always loved rum, so what isn’t to love with rum and butter and spices? This ganache is not hot, obviously, but you still get all the lovely flavors and you just want to curl up near the fire and read a good book.

Elderflower is a particular favorite for my mother and me. We love the delicate flavor in cocktails and desserts, and so this is my chocolate for her birthday! Paired with the lightly herbaceous notes of lemon myrtle, this chocolate melts away with a hint of spring to come.

Cardamom is my favorite spice. I use it in savory and sweet, basically whenever I can. Paired with coffee in this milk chocolate ganache, you get a almost latte-like effect. The floral of the cardamom blends so well, and uplifts the whole flavor. This one is my birthday present to myself!

Pomegranate, Ginger, and Coconut White Chocolate Ganache
This one may seem weird, I grant you. But you might be surprised at how well the tartness of the pomegranate pairs with the spiciness of ginger and the sweetness of coconut. Pomegranate is often a symbol for the new year in Judaism and Persian cultures, and I’m very happy to welcome the new year in as many ways as possible!

Champagne is probably what I think of first for celebrating the new year. It really is an intrinsically celebratory drink with the sparkling bubbles and the light joyful flavor. Paired with rose and grains of paradise, this chocolate is so fresh and lovely, the new year can’t help but be beautiful.
