Monthly Flavors for January – We Scream for the New Year!

Happy 2025! I wish you all a year filled with laughter, good friends, and of course lots of chocolate! Remember, eating more chocolate is a very valid New Year’s resolution. 

This month is also a big birthday month – so many celebrations (mine, my mom’s, and my best friend). And what is more celebratory than ice cream? So, the theme is all classic ice creams! I didn’t just want to make the classic flavors – there is only so much to do with vanilla ice cream. Instead, these are a also plays with classic ice cream desserts like sundaes and banana splits!

Neapolitan

Dark Chocolate Ganache, Strawberry Gel, and Vanilla White Chocolate Ganache

I think neapolitan is one of the most classic ice cream combinations – vanilla, strawberry, and chocolate. The first recorded recipe is from Prussia in 1839 and was actually pistachio, vanilla, and cherry. It is unclear when the trio settled into vanilla, strawberry, and chocolate but it is thought to have been quite early. I didn’t want to just layer ganaches  – to boring! Also, I find the strawberry often gets hidden behind the strong chocolate flavor. The strawberry gel helps both these factors, giving a lovely almost liquid center with a big berry pop!

Rocky Road

Almond Praline, Vanilla Marshmallow, and Dark Chocolate Ganache

Rocky Road is a quintessential American ice cream: chocolate ice cream with nuts (usually almond) and marshmallow. The main change I made was the almond praline instead of chopped nuts. I love that the praline still adds a little crunch while also bringing a touch of caramel bitterness. It really helps balance the sweetness of the marshmallow.

Banana Split

Banana Caramel and Vanilla White Chocolate Ganache

I love banana splits. Also incredibly American, I used to make them for myself as a kid at least once a month (basically whenever I could get away with it). For this, I wanted the banana to be the main attraction. Making a caramel lets me really bring out the full flavor, and it doubles as being similar to the caramel sauce so many of us drizzle over the split. I am adamant that banana splits must be made with vanilla ice cream, though I usually also finish them off with whipped cream and sprinkles. I couldn’t quite figure out the whipped cream, but I think the overall vibe is definitely still there.

Waffle Cone

Speculoos Cookie Butter with Mint Fondant

Cup or cone? I am almost always a cone person. I love the added crunch, the fragrant vanilla and butter, and the way the ice cream melts into the crisp cookie! Speculoos is a Dutch cookie similar to the wafer used for most cones, only better. With the spices, the cookie comes through beautifully here. I adore mint ice cream, so I had to include it in the line up. Instead of another ganache, I made fondant to really capture that feeling of freshly scooped ice cream – a bit firm but yielding and dissolving on the tongue. I also used fresh mint to really boost the minty-ness!

Sundae

Vanilla White Chocolate Ganache, Rainbow Sprinkles, and Dark Chocolate Caramel

Ah, the classic ice cream sundae. It is so hard to beat the versatility and just deliciousness of the classics! I always made it as vanilla ice cream, chocolate sauce, whipped cream, sprinkles. My parents didn’t keep maraschino cherries around very often, so they don’t feature much in my memories of sundaes at home. I think this chocolate really hits all those notes. The caramel is almost fudge-y, the sprinkles add crunch and fun, and the vanilla ganache pulls it all together. 

Butter Pecan

Brown Butter Ganache with Maple Pecans

Another incredibly American ice cream flavor is butter pecan. A vanilla custard ice cream base (often with added butter flavor) and pecans – pretty simple! I didn’t want to mess with the overall composition too much, just heighten the flavors. The brown butter ganache is smooth, almost nutty, and floral from the vanilla. The maple pecans are crunchy, caramelized, and somehow the maple really makes the pecan pop even more.

Cookie Flavors

#1 Speculoos Cookies

A wonderful Dutch cookie, speculoos (or speculaas) is a lightly spiced almond cookie. Crisp and buttery, these are a much better version of a waffle cone in my opinion!

#2 Neapolitan Checkerboard Cookies

Just like the ice cream, these buttery cookies combine vanilla, strawberry, and chocolate. The checkerboard pattern really helps show off all the beauty of these three flavors.
