Monthly Flavors for July – Don’t Fly By!

Oh me oh my, it is July! Summer is here with all the beautiful bounty – stone fruit are absolutely amazing as we say goodbye to mulberries for the year. The peaches have been astonishing recently, and I seriously cannot get enough. I can get enough of this heat though! Please seriously consider getting the shipping upgrade with your chocolates for the next few months. I do my best, but the heat is really hard to beat. 

The flavors this month are “stereotypical summer” flavors. I wanted to make you feel like you were out camping, or biting into perfectly ripe fruit, or just soaking up the rays.

Lemon Marmelade with Matcha White Chocolate Ganache

Lemon and matcha are a delightful pair. Bright sourness and earthy bitterness, all rounded out with sweetness. Yum! Plus, this chocolate looks so summery – the ganache is bright green contrasted with the yellow marmelade. Just lovely.

Apricot Caramel

I love the tanginess of apricots. It can be really hard to get it to come through, but by making my own puree I find I have a lot more control in fruit ripeness. Honestly, this caramel makes my mouth water as I am making it. The light bitterness from the caramel perfectly plays off the apricot tanginess, and I just want to lounge by the pool eating these by the dozen.

Sangria Dark Chocolate Ganache

Sangria is one of the first drinks I think of for summer. I had the opportunity to travel in Europe with some friends after high school, and I very fondly remember drinking sangria in Barcelona on the beach while people watching. It was wonderful. This ganache is silky with big orange flavor up front, then mellowing into red wine and dark chocolate.

Smoked Marshmallow

I actually am not a fan of s’mores or marshmallows in general. I never got into the texture. However, there is something really wonderful about marshmallows roasted over a campfire. I love the slight crunch giving way to a creamy inside, a little smokey and sweet. I can’t send perfectly roasted marshmallows unfortunately, but this is pretty close. Smokey, sweet, and crunchy from the dark chocolate outer layer! It is like camping in a mouthful. 

Peach Cobbler

Peach White Chocolate Ganache with Oatmeal Streusel 

I am absolutely obsessed with peaches right now. I cannot get enough! While I normally just eat them by themselves, I have always loved peach cobbler. It is a quintessentially summer dessert! The oat streusel here is buttery and crunchy, and the ganache is juicy and bright. So delicious! I can’t get you a piece of warm peach cobbler, but this is pretty darn close.

Exotic Fruit Pâte de Fruits with Lime Milk Chocolate Ganache

I, sadly, am allergic to pineapple. This means I am super wary of anything “exotic” most of the time. Here, the pâte de fruits is passion fruit, mango, and coconut. You have the base for a perfect cocktail here, especially with the bright and bold lime ganache. Just pretend to be sitting on the beach while you eat this one, and you will be transported.

Cookie Flavors

#1 Key West Chocolate Treasures

These are semi-soft chocolate coconut cookies. They taste like old-fashioned goodness – chocolatey, coconutty, a little tangy from sour cream. Yum! I was actually drawn to this recipe from Maida Heatter because I thought my dad would really enjoy them. I hope you do too!

#2 Semolina Biscotti with Blueberry Icing

Semolina here gives a wonderful nutty flavor that is lifted up with lemon zest. With the beautifully bright glaze, these are the perfect summer cookie! Enjoy with a glass of wine or a tea.
