It is June, one of my favorite months – Pride Month! While I am lucky and privileged to be out and proud, this is a month for everyone discovering who they are, supporting those they love, and cheering each other on. LGBT pride was started with a riot, and we have fought hard to get where we are. The way the hate and bigotry seems to be taking over US politics recently makes me incredibly angry and sad. So, 15% of proceeds this month will be donated to The Trevor Project. I have always been a huge champion of The Trevor Project, often raising money in high school for them. The Trevor Project provides crisis counseling to LGBT+ youth 24/7/365. They are an amazing organization helping kids all over, and I am extremely proud to be able to donate to them.
The chocolates this month are inspired by the various LGBT+ flags! The flavors are also somewhat inspired by the colors of the flags, though much more loosely than the painting.

Pomegranate Reduction with Cassis Dark Chocolate Ganache
The rainbow pride flag is the most common pride flag out there. Originally, the flag actually had 8 stripes instead of the 6 we see today (pink and turquoise have been dropped). The rainbow is to symbolize all the beautiful diversity of the LGBT+ community. This chocolate has a sour tanginess from the pomegranate molasses and the black currant to represent the struggle behind the pride movement – it certainly isn’t all sweet. But the cassis ganache finishes on a light note, because this month is also about all the things we have accomplished.

Orange Blossom and Preserved Lemon Caramel
Lesbians make up the first letter in the LGBT initialism. When pride was first celebrated, L was the second letter. It was moved to the front after the AIDS epidemic to thank all the lesbians who supported and helped gay men when no one else would. This caramel is a little salty from the preserved lemon, then evolves into citrus and the floral orange blossom water.

Mint and Cucumber White Chocolate Ganache
The gay men’s flag, or MLM flag, is not used very widely. It is based off the lesbian flag with greens and blues instead of oranges and pinks. Personally, I am glad that gay men are starting to use a flag other than the rainbow pride flag – they deserve their own flag too! This chocolate is refreshing and light. The mint is strong at the start, finishing with the cucumber earthiness that is just lovely.

Blueberry White Chocolate Ganache with Dried Cherries
Bisexuals are people attracted to their own gender and others. It is not binary, nor is it transphobic. Those of us who fall into the non-monosexual identities often get told it is a phase, or we are just doing this for attention. Bisexuality is valid, and is actually the majority of the LGBT+ community. 57% of LGBT adults in America identified as bisexual. Made with fresh and freeze-dried blueberries, this ganache is intensely berry forward! Perfect for summer, this chocolate is oozing fruity goodness.

Strawberry Dark Chocolate Caramel with Rhubarb White Chocolate Ganache
Transgender people are people who identify as a different gender than the one assigned at birth. This includes people who fall outside of the woman/man binary such an non-binary, genderqueer, and gender fluid. Currently, this group is the most viciously under attack in the US by lawmakers. Several states have started passing legislation preventing trans people from transitioning, accessing appropriate health care, and even the ability to compete in sports. Only about 10% of American LGBT adults identify as trans, which means less than 1% of all American adults. The discrimination and hate they are facing is abhorrent and I hope everyone does their part to fight back. This ganache is made with coconut milk, so the coconut flavor is light. The raspberry adds this lovely tangy punch before finishing in sweet milk chocolate.

Pansexuals are people who are attracted to people no matter their gender. We fall under the bisexual umbrella like all non-monosexual identities. I personally identify as pansexual because I am attracted to people all over the gender spectrum, and their gender has no bearing on my attraction. The idea of only being attracted to one gender is frankly confusing to me! The caramel is a bit more bitter with the addition of dark chocolate, though sweetened by the strawberry. To offset the strawberry, the ganache is sour and wonderful! The combination is addictive and summer in a mouthful.

Lightly nutty and wonderfully buttery, the sprinkles add a bit of crunch and texture to make a damn addictive result!

To me, summer means citrus baked goods – lemon meringue pie, key lime pie, orange scones. So, here we have a perfect summer cookie! Though jam packed with lemon zest, there is yuzu powder to give an almost floral note at the end. Wow!
