Monthly Flavors for May – Blooming into Spring!

May marks the quiet shift from spring into early summer—a time when the days grow longer, the air feels lighter, and everything seems to settle into a slower, more intentional rhythm. It’s a month of small celebrations: fresh flowers on the table, cool evenings on the porch, and flavors that feel crisp, clean, and full of life. This month, we’re embracing what May does best: simplicity, brightness, and the quiet pleasure of the season unfolding. 

Specifically, this month is all about flowers. Enjoy this moment with a bouquet of chocolates, or gift it to someone who needs it. Or both!

Vanilla

Matcha, Passion Fruit, and Vanilla White Chocolate Ganache

Matcha, passion fruit, and vanilla white chocolate ganache come together in a bright, balanced trio—earthy, tart, and creamy all at once. The grassy depth of matcha grounds the tropical tang of passion fruit, while smooth vanilla white chocolate wraps it all in a silky finish. It’s a bite that feels both vibrant and calming—like sunshine with a quiet breeze.

Orange Blossom

Sesame and Almond Marzipan with Orange Blossom Milk Chocolate Ganache

This one is inspired by some of my favorite Moroccan desserts. Often combining almonds, sesame, and orange blossom water I am sure this is only the first time I will play with this combo. Toasty sesame and almond marzipan create a rich, nutty base, softened by the floral sweetness of orange blossom milk chocolate ganache.

Mango and Orange Gel with Hibiscus Dark Chocolate Ganache

Mango and orange bring a burst of juicy, sun-bright flavor, layered with the deep, tangy notes of hibiscus and dark chocolate. Bold and refreshing, it’s a tropical-meets-floral pairing that feels like a vibrant getaway in every bite. What’s not to love?

Chamomile

Chamomile Salted Caramel

Chamomile is most often consumed as a tea. Earthy and quite light in flavor, I had a hard time finding the right balance here. In the end, this caramel brings together the calming warmth of chamomile with the rich depth of golden caramel, balanced by a delicate hint of sea salt. It’s smooth, comforting, and just complex enough to keep you coming back for one more taste.

Rose

Strawberry and Rose Chocolate Ganache

Strawberry and rose a romantic blend of fruit and floral—ripe berry sweetness layered with the soft, aromatic lift of rose. It’s elegant and fragrant, with a silky finish that feels both classic and fresh.

Lavender and Peach White Chocolate Ganache

Sumer is just around the corner, and I cannot wait for my favorite fruit to come back in season. This ganache combines the juicy sweetness of ripe peaches with the calming floral essence of lavender. The smooth, creamy white chocolate ties it all together, creating a perfect balance of bright and soothing flavors in every bite.

These cookies are buttery and addictive with the added bonus of being so darn pretty! The flowers do add a little flavor – the geraniums are grassy and a touch citrusy. The perfect gift for Mom or anyone else this month.

Though these cookies may look overly rich and chocolatey, I promise there is a wonderful balance here. These almost brownie-like cookies are moist and addictive, and before you know it the box will be gone.
