This one is a take on pecan pie. The pecans are crunchy and delightful, with the maple syrup brightening the overall flavor. Meanwhile, the caramel is luxuriously bitter and sweet. Though there is no molasses, the caramel comes close to the tangy depths so familiar in a pecan pie. I’ll take this for dessert any day!

Peanut Praline with Raspberry Ruby Chocolate Ganache

What is more comforting than a PB&J sandwich? To me, they are love. My dad used to make them for me, and of course they were always the best. To this day, I ask him to make me one when I head back from San Diego. While not directly wintery or particularly holiday forward, I think this chocolate is like a big hug filled with love – and that is really what the holidays are about.

Ah, to sit by the fireside and sip on an old fashioned cocktail – what a wonderful way to spend a winter evening! The caramel lends a wonderful depth to the bourbon, and the Angostura bitters bring zing and baking spices. A pretty perfect old fashioned, if I do say so!

Coffee Milk Chocolate Ganache with Toasted Hazelnuts

Coffee and hazelnut are an absolute delight together. I added Amaretto to the ganache to help boost the hazelnut flavor throughout, and it makes for an amazing mouthfeel. The hazelnuts are deeply toasted to bring out the maximum flavor, and the milk chocolate is this wonderful sweetness tying it all together. Wow!
