Happy Holidays! I hope you enjoy these beautiful chocolates. Below you will find some tasting notes and the story behind each one. I picked these flavors to be wonderfully wintery and the best of the holiday treats. I hope these bring you as much joy to eat as I got making them!
Holiday Flavors
Chilly
Apple Butter with Rum Dark Chocolate Ganache
There are few things more fall appropriate than mulled apple cider (spiked or otherwise). I made the apple butter with Granny Smith apples, Ceylon cinnamon, star anise, and cubeb pepper. It is very reminiscent of mulled cider, but a little more sour from the apples I picked. The ganache is so smooth, with a funk from the rum agricole I used. Together, they warm you up perfectly!
Comfort
Peanut Praline with Raspberry Ruby Chocolate Ganche
What is more comforting than a PB&J sandwich? To me, they are love. My dad used to make them for me, and of course they were always the best. To this day, I ask him to make me one when I head back from San Diego. While not directly wintery or particularly holiday forward, I think this chocolate is like a big hug filled with love – and that is really what the holidays are about.
Sip
Jack Daniels Old Fashioned Caramel
Ah, to sit by the fireside and sip on an old fashioned cocktail – what a wonderful way to spend a winter evening! The caramel lends a wonderful depth to the bourbon, and the Angostura bitters bring zing and baking spices. A pretty perfect old fashioned, if I do say so!

Coffee Milk Chocolate Ganache with Toasted Hazelnuts
Coffee and hazelnut are an absolute delight together. I added Amaretto to the ganache to help boost the hazelnut flavor throughout, and it makes for an amazing mouthfeel. The hazelnuts are deeply toasted to bring out the maximum flavor, and the milk chocolate is this wonderful sweetness tying it all together. Wow!
