October has got to be one of the most fun months, right? Halloween can be as scary or as silly as you decide, and it is so great to have a month based around such a fun holiday. I also get so excited to make my spooky chocolates each year. As an extra treat, all of the chocolates are filled with caramels! We could all use a little extra sweetness, right?

Hazelnut Caramel with Coffee Crunch
What a lovely combination! I love an unexpected caramel, and I feel like a nutty flavor is not seen very often. The caramel is made with caramelized hazelnut paste, and the coffee crunch just goes so very well – chocolatey, a touch salty, and nutty. YUM!
Pumpkin
Miso Caramel with Candied Pumpkin
Well, you know I had to have pumpkin somewhere. I happen to love miso in sweet and savory applications, so why not pair with pumpkin – also great with sweet and savory? The pumpkin is nice and earthy which pairs so well with the umami from the miso.
Ghost
Kalamansi Caramel with Coriander Almond Duja
Kalamansi is one of my favorite citrus! It tastes like a lemon and lime combo and in my opinion is darn addictive. It is sour and tangy but sweet from the caramel. The coriander pops so nicely with this combination of tangy and sweet, and the almond gives it this lovely roundness.

Spiced Carrot Caramel with Pecan Praline
This is actually a caramel I just developed for a new latte at my cafe (The French Door Cafe) instead of making another take on a PSL. The caramel is made with fresh carrot juice with cinnamon, cardamom, ginger, turmeric, and nutmeg. It is so warm and cozy and lovely. Paired with the sweet pecan praline, this chocolate is fall in a bite.
Frankenstein
Salted Vanilla Caramel
A classic! Salty, sweet, chewy, and oh so delicious. I made this one with Uganda vanilla beans to highlight the chocolate while still having a strong vanilla flavor. Happy Halloween, this one is a real treat!
Skull
Rhubarb and Blood Orange Caramel
Another fun, fruity, tangy caramel! Blood orange is very thematically appropriate but also has a deeper and earthier flavor than Valencia oranges, and I thought that went so well with the rhubarb.
