Monthly Flavors for September – Good Morning Autumn!

Welcome to the end of summer, and the start of autumn. The weather still hasn’t changed much here in San Diego, but I have hopes for cooler days soon. September is National Breakfast Month, and I happen to love breakfast. This month, here are 6 takes on some of my favorite breakfast items – good morning and enjoy!

Latte

Espresso Caramel with Milk White Chocolate Ganache

What better start to the day than a lovely coffee, right? I love a simple latte, personally. The hardest part of this chocolate was getting it to taste milky without being overly sweet – I think it is pretty great though! Let me know if you agree. 

French Toast

Maple Syrup with Vanilla Custard White Chocolate Ganache

A classic for a reason and beloved by many! French toast was a difficult flavor to conceptualize as a chocolate though. To me, the main flavor is the custard the bread soaks in, so that is what I wanted to make sure really came through. Plus, with the maple syrup it just tastes like the morning!

Orange Juice

Orange Gel with Orange Milk Chocolate Ganache

Orange juice was a surprisingly difficult idea to execute! I can make many lovely orange ganaches but those don’t really read as pure orange. I wanted a liquid element, and I think the gel does a great job imitating that. Then I decided to go away from pure orange and add milk chocolate. Why? Because I really love the combination of the two!

Buttered Toast and Jam

Berry Jam, Brown Butter Ganache, and Baguette Duja

I knew I wanted to to a take on bread when I first came up with the breakfast idea, but wasn’t sure how. The baguette duja ended up being the perfect solution! You get the lightly sweet jam, the buttery nuttiness of the ganache, and the crunch of bread! It really is just like having toast, only chocolate.

Yogurt Parfait

Raspberry Gel, Yogurt White Chocolate Ganache, and Orange Blossom Granola

Personally, if I am not having toast for breakfast I am almost always having yogurt and granola for breakfast. I love the orange blossom granola I make, so why not showcase it in a chocolate? The ganache is lightly tangy and pairs with the raspberry, then you get the crunch of the granola. 

Croissant and Coffee

Croissant Ganache with Coffee Crunch

This one is actually not mine – the recipe comes from Melissa Coppel. I think this is a pretty genius combination! I took a class with her a couple years ago and she was talking about how she developed this recipe – getting the croissant to come through was hard! But in the end, I think this is just such a fun take on the quintessential French breakfast!
